Tuesday Tell All

I didn’t get a post in yesterday so here’s a quick recap of my Tuesday. Yesterday my day started with a dentist appointment bright and early in the morning.

Strange fact- I actually kind of like going to the dentist, weird? Probably. Anyway, I wore my workout clothes and went straight to the gym after my appointment where I just did a quick 30 minutes on the elliptical and some abs before calling it quits, because I was still super sore  from body pump last night.

Lunch

For lunch I had an egg sandwich on bread thins made with: one egg, some avocado, and a wedge of laughing cow swiss cheese. Plus, a vanilla Oikos greek yogurt with some blueberries and oats mixed in. Perfect lunch.

I also went to Sports Authority where this pair of super comfy/cute/perfect shoes that were on sale called to me. I obviously replied.

Dinner

For Dinner Amy and I made a chicken dish with mushrooms, onions, and peppers, plus broccoli on the side. And, we decided to make use of our left over tiki plates from her grad party.

Dessert was a repeat of the previous night… Skinny Cow strawberry shortcake ice cream sandwich, and I have a feeling I will be having lots more of these babies.

After dessert I painted my nails blue in the spirt of Fourth of July 🙂 The color? Essie Mesmerized. I know Essie is expensive, but I can’t help it I’m hooked!

Laughing Cow + Skinny Cow

Hello!

I guess since I missed a week of blogging my urge to write posts is at an all time high :). I can’t help it I have a workout, eats, and exciting news to share, and I haven’t shared those in forever.

Let’s start with my lunch today.

Lunch

I came home from the beach to a house with a broken fridge. Ok- not broken, but the power had gone out and everything inside of the fridge and freezer went bad. It was quite depressing to throw everything away, especially my cookies and creme Skinny Cow ice cream sandwiches.

Anyways, since we have limited food options at the moment I had to work with what I had, and since there is no refrigerated items a peanut butter banana toasted english muffin sounded perfect. I also had a side of fruit/nut trail mix that was left over from Amy’s graduation party.

It held me over all day and even throughout my workout- which was 20 minutes on the elliptical and a body pump class with Amy. The class seriously kicked my butt. I haven’t strength trained in forever and my body could tell. Plus the tracks for this class seemed extra difficult today, I don’t know maybe I’m just being a wimp, but I am definitely going to feel it tomorrow. Better sore than sorry ;).

I am now making a goal to incorporate more strength training into my workouts, because I have seriously been slacking in that department all Summer. I feel like I have only been running and it’s time I add some more variety/intensity. Does anyone have any suggestions for good strength training workouts? Ideas would be appreciated :).

Dinner

When I got home from the gym I made a quick quesadilla that included:

  • Peach Mango Salsa (ummmm deliciousness)
  • Avocado
  • Mushrooms
  • Laughing Cow Queso Fresco & Chipotle Wedge

This picture was taken after I already ate half of it, because I clearly couldn’t wait two seconds to take a picture before I practically demolished it, oops. There was no meat included because of my stupid freezer malfunction, but it was all good because the Queso Fresco Chipotle wedge was by far the highlight of this meal. I bought them yesterday and tried one for the first time with this meal, and my goodness was it amazing.

Dessert

After the gym, Amy and I stopped by Giant to pick up Safe Haven from Red box and to get a few things, and while we were walking down the frozen food section, we naturally found our way to the ice cream. And, guess what we found? Strawberry Shortcake Skinny Cow Ice Cream Cakes… yes, you did read that right. We obviously bought them and how perfect was our timing, since I had just disposed of our cookies and creme ones.

It was soooo good, and I enjoyed every last bite. I especially loved it because of the vanilla cakeish part. Definitely better than the cookies and creme ones, and that’s saying something because I love those. Oh and peep Spanky.

I’d say having both Laughing Cow and Skinny Cow  = a great day. Fun fact- My parents nickname for me is Moo, so maybe I’m biased.

I am typing up this blog while watching Safe Haven with Amy. I am allowed to blog during it because I have already seen it! I read the book back in the Winter right before the movie came out (duh) and loved the book, but hated the movie. However, watching it now I am liking it way more. So, I came to the conclusion that I just saw the movie too soon after reading the book, I guess?

Tanning and Target

Good Evening!

I feel like I haven’t written a normal post in such a long time, I’ve been holding out on you guys!

Let me get back on track and fill you in on my day.

I didn’t have to work today, so I woke up around 8:30 and went on a 3 mile hilly run around my neighborhood.

Breakfast

When I got back from my run I ate the Overnight Oats that I prepared the night before. I always add a 1/2 a banana to my overnight oats in the morning, but this morning I came back to a banana-less house. I was depressed. But, then I found a full box of big, fat, juicy blueberries and my depression was instantly lifted :).

After my oats, I gave Spanky another bath (you can see how the last one went here). And, then spent the rest of the day reading The Help, while tanning on my deck. Spanky was catching some rays as well.

Lunch

For lunch I tried to be a little chef and create a seafood salad with the leftover crabs and shrimp from our Father’s Day feast. Did I mention Crabs are my absolute favorite food like ever?

Oh, and old bay on crabs = complete happiness. I remember when I tried to tell 2 of my friends from North Carolina how much I loved Old Bay and they had never heard of it. Um what? They were seriously missing out all their lives. They have obviously have since been forced by me to eat it.

I mixed whole wheat pasta, shrimp, 2 picked crabs, and some avocado. However, it didn’t turn out so well. I don’t think the combination of avocado with seafood was one for my tastebuds. Ya win some ya lose some. I did enjoy eating it on my deck while sunbathing though :).

When my Mom came home we went to Target with a plan to buy just one thing: Divergent. I have been wanting to read it for so long. Everyone whose read it loved it, and said I had to read it! I finally have it and I can’t wait to read it at the beach next week after I finish The Help.

Obviously we bought more than just that book, because it is impossible to go to Target and just buy one thing. I ended up getting the book, a super cute high low blue dress that I am planning to wear on Friday to Amy’s graduation, some more of my favorite Vanilla Whey protein powder, strawberries, and bananas (thank goodness).

After Target we went to Kohls because I needed some new polos for work. Annnnnd again, ended up leaving the store with more than I planned on getting. I also got a cute hot pink running tank and some plain black running shorts. I couldn’t resist :(.

I was so excited about my new running gear I decided to run 2 miles as soon as I got home to test it out. It was another 3 miles plus 2 miles = 5 kinda day.

Now I’m off to watch the episode of Real Housewives of New Jersey I missed from last night, have a good one!

Question for ya: What is your favorite food of all time?!

Mine is a 3-way tie between: anything with peanut butter, crabs, and pasta salad.

 

 

Summer Day

Hey, Friends!

I hope you’re Wednesday went well.

My morning started bright and early with peanut butter banana blueberry wrap. I was inspired by Amy’s peanut butter banana wrap she made last night for her lunch today. Plus, we just got a brand new peanut butter, so obviously I had to break it in ;). I was not a happy camper when I came home to this last night…

Luckily my Mom knows about my dire need for peanut butter in my life every single day, and when she came home last night this was in my sight. Phewww. Thank goodness for Moms.

All you do is spread on some peanut butter and add 1/2 a sliced banana, then add whatever toppings you want. This morning I added cinnamon and blueberries. After all my toppings were added I put it in the microwave for 30 seconds because melty peanut butter = yum.

Workout

I ate my wrap, digested a little bit, did some blog stuff, and eventually went to the gym. My legs were still super sore from my run yesterday and my circuit training on Monday, so this was all I could manage:

  • 10 minutes on the elliptical (just to warm up my legs)
  • A thirty minute Pure Stretch class
  • Abs
  • 1 arm machine

I originially wanted to do a Yoga class this morning but my gym wasn’t offering one. When I saw Pure Stretch on the schedule I was game. However, when I got to the class I was the youngest one in there by at least 30 years. Hey stretching is stretching!

Lunch

After the gym I came home and made another one of my Peanut Butter Banana Smoothies.

It was amazing as always.

After downing my smoothie in .2 seconds I went to my friend Kristin’s pool and laid out with my friends all day long while reading the Help, oh how I love Summer.

Snack

When I came home from the pool I devoured some watermelon.

For dinner my parents brought home Athens Grill which is my absolute favorite type of food… Greek!

It was delicious, but I ate one too many pitas drenched in Tzatziki sauce and my belly was beyond full. I convinced Amy to go on a long walk with me to make my stomach feel better. We walked a little over two miles and brought Spanky along, of course.

Amy and I even saw our first fireflies of the Summer tonight!! We also mapped out our morning runs for tomorrow. The only downside? We are most definitely going to wake up with about a hundred bug bites. We were stupid and forgot to put on bug spray :(.

Five minutes after we got home my brother Keith noticed a tick on Spanky’s face from the walk.

Summer To- Do list

Good Evening, friends

I am on a roll today, I think this is my third post!

I’m writing up this blog post while trying to watch The Bachlorette, but for some reason I kind of hate this season. I am actually surprised I dislike it so much, because I really liked Des when she was on the Bachelor with Sean. I don’t know what it is about the season! Maybe it just seems so much more fake for some reason. Does anyone else feel this way?

Anyways, before I tell you about all of the stuff I want to do this Summer, I need to fill you in on my delicious creation I made for lunch earlier today.

Lunch

When I got home from the gym, my stomach was grumbling so I got started on my lunch. I made a tuna salad type meal with the addition of a few ingredients you may think are odd to be mixed with tuna. But just trust me on this, it’s so good, and so much healthier than your typical tuna salad.

Tuna Bowl

To make my lunch I used the following ingredients:

  • 1 can of Tuna
  • 1/4 of a stalk of celery
  • About a tablespoon of Grey Poupon Spicy Mustard
  • 1 Hard Boiled Egg
  • A little bit of Onion
  • A handful of Chick peas

You just mix it all together and Voila! I know it sounds weird, but don’t knock it till ya try it ;).

A little while later I chowed down on some Pineapple Greek Yogurt, my new favorite kind.

Dinner

For Dinner, I made a simple chicken wrap with salsa, baby bell cheese, and onions.

I have tons of fun stuff to look forward to this Summer, and on top of all that here’s a list of other things I hope to do in between all that fun stuff:

1) Go hiking. I have been wanting to go hiking for seriously SO long, it needs to happen! Hopefully I will get a chance to go to Sugarloaf Mountain and Great Falls.

2) Pick fresh fruit and go to a Farmers Market. Can you believe I’ve never been to a Farmers Market? I know this will happen this Summer because there is one right by my house and Amy loves to go, so I’m pretty sure I can convince her to go on a Sister Veggie Date.

3) Go to either an amusement park or a Water park. The last time I went to an amusement park was my 9th grade Physics trip to Six Flags. UM, this needs to change. I don’t even know if I’m still scared of roller coasters haha!

4) Read the Harry Potter series. I am in love with all the movies, but have never read the books. Wendy and John gave me a kindle this past Christmas, so I plan to read them all on that.

5) Read Gone Girl and Divergent. Amy is currently reading Gone Girl and says I have to read it, so I’m down. I have also been told by so many people that if you like the Hunger Games (which I do), then you have to read Divergent, so I’m going to. I guess I should probably finish The Help first…

6) Finish my Senior Year scrapbook. Yes, I still have not completed my scrapbook from 2 years ago :(.

7) Go to an Orioles and Nationals game.

8) And, lastly, I want to run a 10k!

Hummus = Happy

Good Afternoon!

I just ate such a good lunch, and decided I had to share my creation with you guys, you’re welcome in advance!

Let’s back up a little bit first though. Last night I went the movies with my friend Kelly. We saw Now you See Me, and it was so good! I felt completely mind blown about twenty different times throughout the movie, and it was a little confusing, but it all came together in the end. And, it didn’t hurt that James Franco’s little brother, Dave Franco was in it. While James will always be > than Dave, he’s not too bad ;).

Anyways, since I worked last night we didn’t go to the movies until 10:30, and I didn’t get home until around 1 a.m. That meant my plans of running early in the morning went to the dust.

I was originally supposed to go hiking at Great Falls with my friends Emily and Paige later today, and figured that could be exercise for the day, but since it is raining, and it’s just supposed to rain more, that plan went to the dust as well. What to do? Tough it out and run in a little rain? Yup! My legs were still a little bit sore from the gym yesterday so two wet miles seemed like more than enough.

It actually was only drizzling throughout the run, so it wasn’t too bad. Oh, and I decided I had to take a picture reppin’ my Pirates today, Argh! When I got back from my short run I set up my yoga mat in the kitchen to stretch out my tight legs, and this little man decided he wanted to stretch as well, or ruin my stretch-sesh and just conveniently take a nap right on my mat.

Lunch

After I was so rudely interrupted, I decided to start making some lunch. I had absolutely no idea what I wanted, so I just opened the fridge to check out my options, and was instantly inspired by some Tribe Red Pepper Hummus. I knew I didn’t want chips and hummus, and I knew I didn’t want a sandwich, so I decided to try to incorporate my hummus into a wrap.

First I just added the hummus onto a wrap, and then just kept adding other ingredients I wanted from the fridge.

The final product ended up including:

  • Tribe Red Pepper Hummus
  • Onions
  • Spinach
  • Feta cheese
  • A tiny bit of leftover guacamole (courtesy of my Mom’s book club)
  • Tyson’s grilled chicken breast

Delicious and nutritious!
